Boston butt or pork butt is American name to valuable pork piece that is cut from pork shoulder. You can feel herbs, spices, paprika, black pepper, mustard, coriander, chili, onion, garlic, fennel and enjoyable oak smoky taste while eating heavy pork shoulder in rich BBQ marinade.

 

Ingredients

Pork shoulder (85%), marinade.  Marinade: water, soy sauce powder (incl wheat), brown sugar, salt, rapeseed oil, sugar, spices (incl mustard), flavorings (incl oak smoke extract, vinegar, yeast extract, smoke flavor), acidity regulators: E300, E330, thickeners: E412, E415, food colors: caramel, paprika extract, dried vinegar.

Preparation

Set meat on the grill above the embers only when you can hold your hand in the altitude of 10 cm for 3-4 seconds without burning yourself. At first grill the meat from both sides for 1 minute to catch the meat juices. Then turn the meat pieces no more than once, otherwise it will dry them. Use barbecue tongs not fork to avoid meat juices coming out. Grill the meat for 10 minutes on each side. (In the oven cook at  180º C for about 20 minutes). For a softer and juicier dish braise the meat under cover at low temperature.
