Boston butt steik tammesuitsuses marinaadis

Taste of America – ameerikapärastest maitsetest inspireeritud grilltoodete sari Rakverelt!

Boston butt või pork butt on ameerikapärane nimetus sealiha väärttükile, mis lõigatakse seaesiosast. Toeka seaabaliha ehedas barbeque-maitselises marinaadis on tunda maitsetaimi ja vürtse nagu paprika, must pipar, sinep, koriander, tšilli, sibul, küüslauk, apteegitill ning mõnusat tammesuitsust mekki.

Koostisosad

Seaabaliha (85%), marinaad. Marinaadi koostisosad: vesi, sojakastmepulber (sh nisu), pruun suhkur, sool, rapsiõli, suhkur, vürtsid (sh sinep), lõhna- ja maitseained (sh tamm, suitsuekstrakt, äädikas, pärmiekstrakt, suitsuaroom), happesuse regulaatorid: E300, E330, paksendajad: E412, E415, toiduvärvid: karamell, paprikaekstrakt, kuivatatud äädikas.

Võib sisaldada vähesel määral piima, sellerit, rukist ja otra.

Valmistamine

Aseta liha grillile hõõguvate süte kohale siis, kui saad hoida kätt 10 cm kõrgusel grillresti kohal end põletamata 3–4 sekundit. Alustuseks grilli lihalõike kummaltki poolt kõrgemal temperatuuril u 1 minut, et lihamahlad kinni jääksid. Edasi ära pööra lihatükke rohkem kui üks
kord, sest liigne pööramine muudab liha kuivaks. Kasuta pööramisel grilltange, mitte kahvlit, et vältida mahlade väljanõrgumist. Grilli liha umbes 10 minutit kummaltki poolt. (Ahjus küpseta liha ~180 º C juures umbes 20 minutit). Pehmema ja mahlasema roa saad, kui jätad liha
lõpuks veel kaane alla madalamal kuumusel hauduma.
