Lihaveise brisket

Oleme lõiganud kokandusmaailma klassikud ehk tippkvaliteediga lihaveise steigid sinu jaoks juba valmis. Täpselt nii, nagu peab. Laagerdumise käigus on liha muutunud iseäranis pehmeks, küpseb kiiremini ning lihatükk jääb mahlasemaks.

Brisket-steiki on mugav grillida või praadida kuni medium (poolküps) küpsusastmeni. Üle küpsedes muutub liha kuivaks.

Pane pannile pruunistuma, järelküpseta ahjus ning naudi endavalmistatud suussulavat liha. Täpse küpsetusõpetuse leiad pakendilt. Bon appétit!

Valmistamine

Veiseliha valmistamisel kasutatakse 3 küpsusastet:

Küps (well-done) – liha sisetemperatuur vähemalt +71 °C
Poolküps (medium) – liha sisetemperatuur +60…+65 °C
Pooltoores (medium rare) – liha sisetemperatuur +50…+57 °C

Soovitame lasta lihal enne küpsetamist pool tundi toatemperatuuril seista.

Kuumuta paksupõhjalisel pannil väike kogus õli ning aseta sellele lihalõik. Pann olgu kuum, kuid ei tohi suitseda. Enne pannile asetamist võid brisketsteigi köögipaberiga kuivemaks tupsutada.

Pruunista liha 3 minutit mõlemalt poolt. Lõpus maitsesta soola ja pipraga. Seejärel aseta liha 180 °C-ni eelkuumutatud ahju ning küpseta 2–5 minuti soovitud sisetemperatuurini. Küpse brisket-steigi valmistamisaeg ahjus on u 5 minutit, poolküpse u 2,5 min ja pooltoore u 2 minutit.

Võta liha ahjust välja ning jäta 5–10 minutiks (fooliumi alla) puhkama, et lihamahlad lõikamisel välja ei oolaks. Serveeri steik pärast praadimist kuumalt.
